Leftovers recipe competition

The leftovers recipe competition is now closed.
We asked all creative chefs to send in their favourite leftovers recipes. The winner will be published in a cookery book and win a meal at one of the county's top restaurants. There were also shopping vouchers prizes and a cookery course for the best runners up.
All recipes had to include at least one leftover ingredient. The judging was based primarily on innovative use of leftovers, taste and ease of cooking.
For this competition leftovers were defined as:
- anything leftover from a previous meal, eg cooked meat or pasta
- a food item which is near or past its best before date, eg soft fruit or bread
- forgotten fridge food: any food item left at the back of the fridge/cupboard, eg the last egg in the box or an opened jar of sauce.
